Chapter Summary

The cuisines of Eastern Europe and Russia reflect the influences of many different cultures, and feature hearty ingredients and flavorful dishes. Eastern Europe is divided into several regions: the Baltic countries, the Central countries, the Balkan countries, the Ukraine, Belarus, and Moldova, the Caucasus, and the Central Asian Countries. Each of these regions is characterized by a certain style of cuisine, common ingredients, and popular dishes. Once under the control of the Soviet Union, today, their native traditions are re-emerging. Russia's cuisine features grains, beef, pork, dairy foods, and hearty vegetables, as well as mushrooms and fish.
