Fish and shellfish provide many nutrients. Unfortunately, they also contain mercury, which travels to waterways from factories. Many fish are becoming scarce due to overfishing. There are two categories of fish and two categories of shellfish. Government agencies inspect and grade fish and shellfish. There are several qualities to look for when buying fish and shellfish. They are also available in convenience forms. Because they are highly perishable, fish and shellfish must be properly stored. Fish cooks quickly when exposed to dry or moist heat. A variety of methods may be used to cook fish.
