Chapter 45: Pies & Tarts

Chapter Summary

Pies and tarts are made with pastry crust and sweet or savory fillings. There are four popular types of pies. Crust is the foundation of any pie. The right ingredients and preparation are required to make crusts for one- and two-crust pies. Convenience piecrusts and fillings are available. Tarts and turnovers are variations on pies. Tarts have a single crust and are always removed from the pan before serving. Turnovers consist of pastry dough folded over fillings. When baking pies and tarts, it is important to use the correct oven temperature, prevent baking problems, and make sure pies are thoroughly cooked.
